I was waiting on the restaurateur to get back to me about *his* supplier, and after like, a week and a half he told me that (a) his supplier could only get him bleached flour, mostly AP, and (b) he was having a hard time pinning them down on prices. So I'm going to go with #a href="https://www.koerner-co.com/" Koerner Co in New Orleans. You can see the flours they have available on their #a href="https://www.koerner-co.com/74-flours" flours page (funnily enough!), especially in the #a href="https://www.koerner-co.com/110-southwest-flour" Southwest Flour and #a href="https://www.koerner-co.com/112-spring-flours" Spring Flour pages. #h2 A note on flours id=flours Koerner has some King Arthur flour, namely *Sir Galahad* and *Sir Lancelot.* *Sir Lancelot* is the same as their normal All-Purpose flour in the red bag you can get from a supermarket, and *Sir Galahad* is high protein. **HOWEVER** *Galahad* is *higher* in protein than their bread flour; King Arthur's website actually says that *Galahad* is better for bagels and pizza dough. The only kind of regular bread flour (~12% protein content) Koerner has is their own brand, called *Big Chief*. That's what I'm personally going to be ordering, but I think they can do whatever. I assume they can. #h2 Ordering id=ordering I want to put an order in for flour **this week**, so that I can drive down to New Orleans by **Monday, May 11, 2020**. I'm planning on renting a pickup truck for the day so I can load them in the bed. That also means I might be able to deliver the flour directly to your house, which is great for both of us.
