if you come at them angry. It is tough
to fake a happy mood when kneading dough.
At the same time, don’t come at them too
happy, too ready for the toothsome crumb –
the dough needs time to figure out just who
it is, and what it wants, and where it’s from
(metaphorically speaking, though, of course:
the flour came from wheat, and the water
some vintage cold and clear; the salt, coarse-
ground or flakes, and yeast is everywhere).
Now calmly, without breath (just hold it in),
collect yourself. Get ready to begin.
